Speaking about recipes based on beans, it is impossible not to mention a dish of Caucasian cuisine - lobio. Lobio is a hearty appetizer, a salad, and a side dish. It can be prepared from either fresh or frozen beans. In Georgia it is combined with nuts, while the Uzbek dish is meat-based. We will present a classic vegetable recipe.

  • 1 kg beans;
  • 2 onions and tomatoes each;
  • 1 salad pepper;
  • 3-5 cloves of garlic;
  • 120 grams of walnuts;
  • olive or vegetable oil;
  • salt, spices (the recipe involves the use of oregano, hops-suneli, paprika, thyme and cumin, but you can add spices to your taste);
  • greens (ideally a mixture of cilantro and parsley).


First you need to prepare the vegetables - peel, chop, be sure to remove the skin from the tomatoes, press the garlic through a press. Chop the walnuts finely or put them in a blender.

Thaw the pods, chop if necessary and boil in the classic way for 10 minutes from the moment the liquid boils.

Heat a deep frying pan, pour oil and brown the onion, then add the tomato pieces into it. The next component to be added is bell pepper. Simmer vegetables for 2-3 minutes.

Add chopped herbs, garlic and spices, and after them (literally a minute later) add beans. Stir the dish and leave on low heat for 5-7 minutes. After the lobio is ready, sprinkle it with chopped nuts.





In the microwave

The option of cooking frozen pods in the microwave has already been discussed above. Next, you can pour the egg-milk mixture into the cooked vegetable and leave for another 1.5-2 minutes. The result is a fluffy green bean omelette. You can add chopped peeled tomatoes, herbs, and grated cheese to the liquid mixture.

Boiled beans can be mixed with tomato paste and diced tomatoes for a delicious appetizer or light side dish.


In a slow cooker

A version of a simple way to cook green beans using a slow cooker is to cook them in the “Stew” program, adding vegetables and tomato paste.

To do this, mix beans, frozen peas, finely chopped carrots and onions, pieces of peeled tomatoes in the bowl of the device and set the “Stew” mode. Cook for 20 minutes without adding water or defrosting the beans first. The juice of the vegetables and moisture after defrosting will be enough to prevent the vegetables from burning and remain juicy.

After the specified time, open the lid, add salt (do not salt the vegetables at the beginning of cooking, otherwise they will not be able to release juice and will turn out dry), ground black pepper and coriander. It is acceptable to add a crushed clove of garlic. Add 2 tablespoons of tomato paste and simmer in the same mode for another 1/4 hour.


In the oven

A vegetable cooked in the oven, like one cooked in water, retains more healing components. Baking requires less oil than frying, so the dish turns out to be less high in calories.


Baked Beans in Cheese Sauce

Adding cheese allows you to avoid drying out vegetables in the oven, and also adds piquancy to the taste of the finished dish. You should take a high-quality product of durum varieties, experimenting with its taste, you can each time discover new facets of the usual taste of vegetables.

  • 1 kg frozen beans;
  • 100 grams of cheese;
  • 2 liters of water;
  • 50-60 grams of butter;
  • 50 g flour;
  • 1 liter of milk;
  • salt, spices;
  • 1 tablespoon lemon zest.

First of all, you should boil the beans until half cooked. You don’t have to defrost it, but just scald it with boiling water and put it in boiling salted liquid. Cooking time is 5 minutes, after which you need to discard the beans in a colander.

The next step is to grease the oven dish with oil (do not use the whole piece) and place the vegetables there. Heat the milk in a saucepan without letting it boil, add the rest of the butter. Add flour in a thin stream, stirring the sauce to avoid the formation of lumps. Add the zest and grated cheese, simmer for 5-7 minutes, stirring continuously.

Now all that remains is to pour the sauce over the pods and place the dish in the oven, preheated to 200C, for 1/4 hour.


Bean dishes are not recommended for exacerbations of gastrointestinal diseases or intestinal obstruction. People suffering from flatulence should change the water twice when cooking beans. This will help reduce gas formation after consuming beans.

Dietary nutrition involves the consumption of boiled beans. If you are watching your calorie intake, you should remember that adding salt increases the calorie content by about 10-12 kcal. In addition, sodium retains moisture in the tissues, causing swelling and blurring of the silhouette.


Instead of salt, you can season the finished beans with a mixture of onions (preferably semi-sweet), olive or flaxseed oil and apple or wine vinegar.

  1. The meat is cut into small slices and dipped in salt water. The broth is boiled from it for about half an hour. Potato blocks are immediately added to it.
  2. Grated carrots, onion cubes and tomato pieces directly with the skin are fried in vegetable oil until soft. You can add any seasonings to the vegetable mixture to taste. Crushed garlic is also placed here.
  3. Beans cut into cubes and fried from a frying pan are laid out in the broth. The soup is salted.
  4. Cook the ingredients together for another 12-14 minutes.

Green bean soup is served with a portion of chopped fresh herbs.

Green beans with egg

Ingredients: 670 g green beans, 2 large eggs, table salt, 2 large spoons of lime or lemon juice, a mixture of peppers.


A very nutritious dish.
  1. The beans are cleaned, washed with running water, then cut into short pieces and boiled in salted water for 7-9 minutes. Part of the broth should be saved.
  2. Raw eggs are beaten with citrus juice, a mixture of ground peppers and salt. A little of the remaining broth is poured here.
  3. The resulting mixture is poured into a frying pan, and the prepared beans are added to it.
  4. Cook over high heat with frequent stirring for about another minute.

The resulting green beans with egg are served both as an independent dish and as a side dish.

Broccoli with beans - healthy and tasty

Ingredients: half a lemon, half a kilo of broccoli, 2-3 cloves of garlic, 230 g of green beans, olive oil, 2 medium carrots, half a bunch of fresh parsley, salt.

  1. First of all, the cabbage is washed and disassembled into inflorescences. Next, it is cooked in boiling water for 7-8 minutes. The liquid must be salted immediately.
  2. In a separate bowl, cook carrots and beans until tender.
  3. All vegetables are transferred to a colander and doused with ice water. This will allow the green components to retain their bright, rich color.
  4. The beans are removed from the tails and cut into 4-5 pieces. The carrots are chopped into strips.
  5. Heat olive oil in a frying pan. Chopped garlic is placed in it. As soon as a spicy aroma appears, you can add chopped vegetables to the oil and add salt. They fry for 3-4 minutes with frequent stirring.

The resulting dish is laid out in portions, sprinkled with lemon juice and sprinkled with chopped herbs.

Spicy frozen bean dish

Ingredients: 2 large spoons of tomato paste and refined oil, 420 g of frozen green beans, 5-6 cloves of garlic, half a hot red pepper, 2 carrots, 2 large spoons of hot ketchup, white onion, salt, a pinch of coriander.


This dish is suitable for lovers of spicy food.
  1. The beans are defrosted under running cold water and cut into pieces. The carrots are coarsely rubbed. The onion is chopped into cubes.
  2. All ingredients are combined in a separate bowl.
  3. Oil, seasoning, crushed garlic, salt and very finely chopped red pepper are added to them.
  4. The mass is sent to simmer in the bowl of a “smart pan” for 30-40 minutes.

  2. The onion is cut into half rings, and the mushrooms into thick slices.

  4. The food is simmered in a frying pan until the liquid released from the mushrooms evaporates.

Ingredients: large onion, 3 fresh tomatoes, 5-6 garlic cloves, 320 g green beans, 2 large eggs, several leaves of parsley and cilantro, a handful of walnut kernels, salt.

Ingredients: half a kilo of green beans, onion, salt, 60 ml of boiled water and the same amount of balsamic vinegar, 2 sweet bell peppers (yellow and red), 280 g of chicken fillet, dried dill, olive oil.

  1. The beans are immersed in salted boiling water for only 2-2.5 minutes. It should remain firm at the same time. Next, the beans are placed in a colander.
  2. The chicken is cut into small pieces, fried until golden brown in olive oil and placed on a separate plate.
  3. Using the remaining fat, cubes of colored peppers with onion half rings are prepared.
  4. Green beans are also placed here.
  5. Chicken is added to the already prepared ingredients to warm it up.
  6. The contents of the frying pan are transferred to the salad bowl.

The treat is seasoned with a sauce made from hot water, vinegar, dried dill and salt.

On the side

Ingredients: a kilo of green beans, 3-4 large spoons of butter, olive oil, table salt, a pinch of red pepper flakes, 2-3 cloves of garlic, 1 large spoon of lemon zest.


Will be a great addition to any dish.
  1. The legumes are washed and the tails are removed. If necessary, they can also be finely chopped. Next, the beans are cooked for 2-2.5 minutes in salted boiling water and immediately transferred to a bowl with very cold water or ice. This is necessary to maintain the bright color of the product.
  2. Immediately add both butter and a little olive oil to the pan. Finely chopped garlic and pepper flakes are poured in there. The components are fried for literally a few seconds, after which the bean components are added to them.
  3. After 5-6 minutes, you can pour salt and chopped zest into the frying pan.

The finished side dish is served hot with fish, poultry, meat and any vegetables.

Lobio - step by step recipe

Ingredients: 120 g green beans, 2 tomatoes, 110 g walnut kernels, table salt, half a pod of green hot pepper, purple onion, 3-5 garlic cloves, 30 g each of fresh mint, cilantro, basil.

  1. The nuts are crushed in a blender until crumbly.
  2. The beans are washed, each pod is cut into 3-4 parts, and then boiled in salted boiling water for about a quarter of an hour.
  3. The tomatoes are peeled and finely chopped.
  4. Thin onion rings are fried in hot oil until golden brown. Tomatoes, chopped peppers and garlic are also added here.
  5. Cook the vegetables together for 3-4 minutes.
  6. Next, the beans are transferred to them.
  7. In 10-12 minutes the dish will be completely ready.
  8. All that remains is to add salt to it, sprinkle with nuts and chopped herbs.
