What to do with frozen potatoes?

It happened differently for me. I forgot to bring a bag of potatoes from the balcony before frost, and they were all gone. I wanted to throw it away, but then I thought that I could get wartime recipes - then people ate everything. You need to quickly bring a couple of potatoes from the frost and wash them thoroughly. If you have warm water, the skin will easily separate on its own, leaving you with an already peeled potato in your hands. If you wash it in cold water or snow, you just need to clean the peel of dirt.
Next, quickly cut the potatoes into 4-5 mm slices. Don’t be afraid to cut, frozen potatoes contain a lot of voids, so cutting is not difficult. After this, pour a pinch of salt into the frying pan and put our slices there. You can fry without oil, but if you have a little vegetable or just fat, it’s better to add it. Fry on both sides until dark brown and voila - delicious potatoes are ready. The taste is no different from regular one, since we fried it completely.

Potato cakes were prepared using this method back in the Second World War, so people ate without getting poisoned, and so can we. We remove the skins from the potatoes (you can soak them in warm water for 10 seconds, or you can peel them off with a knife). Then grate it while it is frozen. If you wait until it thaws, you won’t be able to grate it anymore - it will look like, pardon the expression, a flaccid condom. After you have obtained a homogeneous mass after grating, stir it with flour until a mixture similar to thick sour cream is formed.
All. Now you can fry the flatbread. Again, if there is no oil or fat, then you can simply fry in a frying pan, without anything.

But in the North there was always a problem with potatoes - they don’t grow there, like many other things necessary for food. But not everyone can become a Chukchi. How to tell them why there are guys with pipes and red flags and slogans here. And here are the flashes in the fog. Up-down, left-right. The ears of the hats are tied, the strained hum is not heard yet, only the flashes in the night are getting brighter and brighter.

Roaring powerfully, the first car flies out onto the river terrace, followed by a second, a third. And now the entire column was filled with beeps hoarse from the frost. The doors of the snow-covered cabins are open. The skinny orchestra briefly croaked a couple of verses. There weren’t that many people – there was enough for the drivers of the first three cars. The others cheered, smiling.

The potatoes also waited their turn. The first thermal waves began to run along the well-worn winter road. These machines are for frost-resistant cargo, including potatoes. It looks like an insulated booth on a car with internal heating. No, not a refrigerator - the exhaust pipe heats the booth from the inside. It's warm in the booth while the engine is running. This is the driver’s concern - to deliver the car, not to stall, not to freeze the potatoes on the road.

Who will understand his nature, who will hear him on those hundreds of kilometers of northern winter roads, who will push him in the side when fatigue overcomes his eyes? Who will tell you how the cylinder crumbles into black dust, how fragile the springs are when the winter road is forty or below. Only the driver, no one else. The thermal tank was loaded with potatoes. They loaded it under the chewing gum, under the ceiling, leaving only room for the spare tire. Only the fifteenth one was alarmed. The engine didn't work. I beeped - no response. The car is parked wisely - with its nose downhill. It will start right away. “Fifteenth” knew the Driver - a little thing won’t stop him on the way. He walked up and looked into the cabin - it was empty, the key was in the ignition, there were no fresh tracks in the snow around. Gasoline is at zero, the engine and radiator are frozen. In spring and even early June there is a threat of return frosts, which have a detrimental effect on plants, including potatoes. If the tops have already grown well and frost occurs, then urgent measures must be taken to save the harvest.

1. Spraying with water

Frozen potato tops can be saved by spraying with water from a hose using a fine sprayer. The thing is that during frosts, the water in the cells begins to freeze and turns into ice. In the morning, when the sun begins to warm up, the vada does not have time to melt and breaks the cells. As a result, the plant dies.

Therefore, in the morning, when there is no sun yet, we simply spray it with water from a hose or watering can, as fertilizer for anyone. Then you need to shade the potatoes from the sun's rays. This can be done using cardboard, special black spandex or regular burdock leaves. Thanks to this method, the water in the cells will slowly melt without damaging the tissue. This will save the plant.

The special drug Epin makes it easier for potatoes to withstand frost, as well as drought and various diseases.

Epin must be used according to the instructions once every 5-7 days after the potatoes have frozen.

3. Fertilizers.

Fertilizers with a high nitrogen and potassium content can save potato tops from frost. Potatoes need to quickly restore their green mass, so we add mullein, but only in a weaker concentrate. To do this, dilute 1 liter of liquid mullein in a bucket of water and mix everything well.

The resulting solution is diluted with water again in a 1:1 ratio. We already water the tops with this solution. You can also add 300 g of wood ash to this solution. Or you can sprinkle ash under each bush. Wood ash contains more than 30 microelements that are necessary for plants.

You can also add urea, potassium fertilizers, and ammonium nitrate to restore the tops. Ammonium sulfate and other easily soluble mineral fertilizers that contain nitrogen.

Many gardeners have encountered a situation where potatoes froze during storage. This is a fairly common problem, because with improper storage and non-compliance with temperature conditions, this is usually inevitable. Let's figure out what to do, how to act correctly and save potatoes in such a situation.

What can cause potatoes to freeze?

Frozen potatoes are common as winter weather is often unstable. It can freeze slightly for the following reasons:

Failure to comply with temperature conditions during storage. This is due to the fact that not all cellars are suitable for storing potatoes. The optimal temperature for storing planting tubers is +3 – +6 degrees, in which case the vegetables will not rot or freeze.

In order for the potato crop to be stored much longer, it is necessary to store it in complete darkness under temperature conditions.

  • Second and no less important.

Air humidity. Can fluctuate between 85-93%.

  • And the third.

Air ventilation directly affects the condition of potatoes. With its help, temperature, humidity, as well as air exchange are adjusted.

If it happened that the potatoes were suddenly frozen, then the situation is more complicated. When transferred to heat, it will become soft and slippery, it will be better to get rid of it.

Before you start resuscitating frozen potatoes, it is worth determining the degree of frostbite. If seed potatoes have been in a cold room for a long time, the temperature in which ranged from 0 to 3 degrees, and the conversion of starch into sugar has already begun, then the tubers need to be transferred to a warm room and after 5-8 days the sugar is converted back into starch, the quality of the vegetable will become the same.

Is it possible to plant frozen tubers?

If sprouts begin to appear on the potatoes, they should be sprinkled with warm water or a weak solution of manganese, the sprouts will begin to swell and then you can safely plant such tubers.

If there were already sprouts on the potato, they could have been damaged when it froze.

Frozen potatoes - a good harvest

If you find that your potatoes are frozen after wintering in the basement, this is not a reason to be upset. Experienced gardeners share their experience on how to get an excellent harvest from frozen tubers.

At the beginning of April, the tubers should be planted in a greenhouse and in a few days the potatoes will be covered with small green bushes instead of the usual eyes. After planting, when the height of the sprouts reaches 15-20 cm, you can safely hill up.

After two weeks, the bushes should be hilled up again and fed with complex fertilizer. If you have already done everything correctly, by mid-summer you will be able to get a wonderful harvest.

Here are some tips on how to properly cook frozen potatoes:

  • We take the required amount of potatoes, put them in water, the temperature of which can be from 40 to 60 degrees. Then the tubers should be thoroughly washed, dried and left for some time in a dark room. This way, it will thaw faster and you can easily clean it and use it in cooking.
  • Don't like the sweet taste? – you can also get rid of it. Leave the peeled and cut potatoes in cold water for a while. Afterwards, boil it in salted water with the addition of vinegar (1 tablespoon of vinegar per 1 liter of water), and the unwanted sweetness will go away.

Preparing potatoes for planting should begin in the fall. It is worth insulating the basement and building storage space. Also make sure that the humidity and air temperature correspond to generally accepted standards.

And only under such conditions can you protect the crop from cooling or sudden freezing, which can render it unusable.

What determines potato yield? Of course, it depends on the assortment of planting material, soil condition, technology and timeliness of agrotechnical practices. But if you grow potatoes in open ground, the yield will depend primarily on the weather.

Gardeners need to not just tolerate the antics of this capricious “lady,” but take advantage of her benefits and try to prevent or minimize the consequences of adverse weather factors. This is the most important rule for achieving stable high results.

What's all the salt?

The past season again turned out to be difficult for gardeners, requiring intense work and initiative. Late return frosts, which occurred twice, destroyed many potato growers' hopes for a high harvest.

Judging by the autumn prices, which have more than doubled compared to previous years, their fears were justified. Market prices for potatoes are simply shocking, and this is during the period of their mass sales, when any manufacturer is trying to sell the maximum amount of product, even at the minimum price, since we still do not have enough good potato storage facilities.

How can potato growers survive late frosts that destroy seedlings and still get a decent harvest? It would seem that everything depends on the timing of planting.

If you plant potatoes later, then likely frosts will pass before the shoots appear. Let's use the old commandment: plant potatoes in well-warmed soil - and you can avoid the risk. Does not work! The experience of the last decade with noticeable climate warming convincingly proves that delays in planting inevitably lead to a decrease in yield.

The summer heat sets in before the potato bushes close in, and the earth dries out and overheats. And the drought begins precisely during the period when potatoes are actively forming a crop.

It’s a shame, because potato tubers, in principle, can be sprouted and planted all year round. This property is used when cultivating it in summer planting, when, in order to avoid the formation of very long sprouts, last year’s tubers are kept in refrigerators until mid-summer or germinated for a long time in the light.

In the southern regions, the technique of growing potatoes in a two-crop crop is widely used.

To do this, young tubers are harvested while the plants are flowering and immediately replanted, having previously been treated with a set of special growth stimulants. In this case, the period of tuberization occurs in the cooler autumn period, and during the scorching summer heat, the plants only grow green mass.

Of course, these technologies are effective and possible only with regular irrigation. Indeed, in the second half of summer, potatoes, as a rule, do not have enough natural precipitation. This is especially true for young plants with an undeveloped root system.

Now this situation is observed not only in the southern, but also in all other regions.

If in the spring you delay the optimal time for planting potatoes by at least a week (in the Forest-steppe and Polesie this is the first two decades of April), this can lead to large crop losses, sometimes up to 50-100 kg per hundred square meters. Even organized irrigation will not help solve the problem.

At night temperatures above 20 °C, tuberization and crop accumulation practically stop; in such conditions, only the tops of potatoes grow. If the air temperature drops, the tubers will continue to develop, but their skin, coarsened during the period of stagnation in growth during the heat, may not withstand the internal pressure, which will lead to massive cracking of the tubers and a decrease in their quality. When choosing a variety and ripeness group of potatoes when grown in modern conditions of a changed climate, it is necessary to take into account the likely timing of tuberization. so that they do not coincide with the peak of summer temperatures.

How to avoid potato losses during return frosts

Perhaps not a single potato grower can remember a case when, after spring frosts, it was necessary to replant potatoes.

Significant damage to plants can only be caused by very late cold weather, returning after the potatoes have entered the budding and flowering phase, or if the seed material was located at the very surface of the soil and the frost damaged the uterine tubers and root system.

In other cases, potato plants quickly recover after frost. The tops, protected from frost by covering hills, rise above the soil, and the young shoots are helped to grow by the already formed root system.

Budding, flowering, and the formation of stolons with tubers occur somewhat later, but with good nutrition and moisture supply, potatoes do not reduce yield by more than 5%. which is almost unnoticeable.

However, potatoes can be helped to realize their potential. After all, if you do nothing and just sadly watch the potato field turn black overnight, the weeds will rise sooner and choke out the potato bushes.

To help potatoes recover faster after frost, you need to feed them with nitrogen fertilizers. There should be no fear of accumulation of nitrates in the final product when applying scientifically based doses of such fertilizers. Nitrogen is a building material for leaves and stems of plants, introduced during this period, it will be used for its intended purpose. After frost, it is better to apply nitrogen in the form of solutions of urea, ammonium nitrate [for example, 1 kg of urea dissolved in 10-20 liters of water, per 1 sq.m.] or tinctures of chicken manure, mullein, watering the rows from a watering can. Then watering should be carried out (if there is no rain), and a day later - loosening the rows to prevent the formation of a soil crust and destroy weed seedlings.

After restoring the tops for hilling, it is advisable to carry out another root feeding with complex fertilizers.

Nitrogen is a building material for leaves and stems of plants, introduced during this period, it will be used for its intended purpose. After frost, it is better to apply nitrogen in the form of solutions of urea, ammonium nitrate [for example, 1 kg of urea dissolved in 10-20 liters of water, per 1 sq.m.] or tinctures of chicken manure, mullein, watering the rows from a watering can. Then watering should be carried out (if there is no rain), and a day later - loosening the rows to prevent the formation of a soil crust and destroy weed seedlings.

After restoring the tops for hilling, it is advisable to carry out another root feeding with a complex fertilizer, for example, nitroammophos NPK 5:16:35 (1 kg per hundred square meters, can be in granules). Then, every ten days, foliar feeding is done on the leaf with ready-made concentrated preparations containing microelements, preferably in chelated form ( Reacom Potato, Raikat, Ecolist Standard, Maxicrop, Hortico, Nutrivant Plus, Master, etc.). The working solution is prepared according to the instructions for the drug, adding up to 80 g of urea to it for spraying 1 hundred square meters of vegetative plants.

If it is not possible to purchase ready-made concentrates, prepare a 0.01-0.05% solution of commercially available soluble salts of microelements (5 g per 10 l of water salts of copper, manganese, boron, molybdenum, zinc, cobalt and 1 g of salts iron, iodine, aluminum).

When carrying out foliar feeding, every time (not only during flowering) any growth stimulant must be added to the Hhk solution ( Fumar, Poteytin, Emistim S, Immunocytophyte, Epin-extra, Bioglobin, Rost-concentrate, etc.). They relieve stress and activate plant defenses necessary for rapid regeneration after frost damage.

If necessary, you can also add a means of protection against the Colorado potato beetle to the tank mixture. But it is better to protect against fungal diseases with fungicides separately, adding only a stimulant to the working solution, so as not to exceed the maximum permissible concentration of the drugs and not harm the plants.

How it was

In many regions this year, after frosts, warmth did not return for a long time. Because of this, crops growing in open ground (tomatoes, peppers, eggplants, etc.) began to lag in growth. The melons especially got it.

But cool weather only benefited potatoes, because they are a moderate-temperature crop. However, due to these natural anomalies, the growing season was delayed and the harvesting dates were delayed. Even early-ripening varieties were ready for harvest only by mid-August, and not, as usual, by the end of July.

But my harvest, for example, turned out to be plentiful and the tubers were large. I think this is the result of not only the use of growth stimulants, but also proper handling of the soil. The fact is that due to crop rotation, it had time to “rest”, and since the fall it has been filled with humus (EM-compost). In addition, I plowed the soil with a green mass of green manure (a mixture of white mustard and oilseed radish) and applied a spring dose of mineral fertilizers. My plot also has a drip irrigation system, which includes the ability to apply biological products and fertilizers through an injector. And this played a decisive role during the period of drought during the accumulation of crops.

About potato varieties that gave a good harvest after frost

Since the summer turned out to be cool, which is favorable for potatoes, varieties of all ripeness groups, not only early and drought-resistant ones, produced a good harvest. Even the “old-timers,” some of whom I was already planning to remove from my collection, were pleased with their results. Thus, early varieties Kiranda Laura, Agave Glazurny, Zelenyi Gai, Ovation, Strumok, Tiras, mid-early varieties Kuroda, Kalinovsky, Smuglyanka, Typhoon, Yubilei Zhukova, mid-season Vernissage, Legend, Roko, and mid-late Zhuravinka gave a good harvest. More promising, of course, are new intensive varieties that are resistant to modern conditions, but bring high yields only when cultivated on a high agricultural background: Bellaprima, Pselsky. Anatan, Okolitsa, Pomkvin, Eurostarch

Over 500 kg per hundred square meters were produced by such excellent varieties of selection in recent years as Fidelia, Suzanne (mid-ripe, Germany), Arizona, Madeleine, Royata KVS(mid-ripe, Netherlands), Ivankovsky early, Slouta(early ripening). As always, the leaders in yield were the newest varieties that successfully passed the state test: K Atania (Germany), Esme, Constance (Netherlands), Radomysl and Duma.

In general, the past season turned out to be difficult, requiring ingenuity and work, but the results, in my opinion, were excellent.

I want to talk about potatoes, or rather, how I saved them. We plant it a little more than one hundred square meters, the distance between the boletus is 60 cm, in the row between the bushes it is 25-26 cm. We always plant on May 9th. I make the rows myself, the holes too, but my husband Mikhail plants them: he doesn’t trust me with that. In the holes where a handful of ash and 1 tbsp have already been placed. l. superphosphate, he very carefully, with the sprouts facing up, places the tubers and carefully covers them with soil with his hands. I make shallow holes and, if the soil is dry, I water them.

During the season, my husband hills the potatoes two or three times. Every year we collect 40 buckets of good, large potatoes for food, five buckets for seeds and five to six buckets of small things. Every three or four years we buy humus and apply it to the site in the fall. Every year, after harvesting, we dig up the soil and plant green manure - rye, oats, mustard. Then we dig again in late autumn.

And now the most important thing. Summer 2017 was very cold and rainy. When the potatoes sprouted, frosts began. Every evening I covered the seedlings with lutrasil, then it got warmer, the forecasts did not promise frost, and I stopped covering. One day in early June, I couldn’t sleep, I went to the window and saw a terrible picture: all my potatoes were white. Throwing on my coat, I ran out into the garden. I touched the bushes with my hand, and they began to crunch – all the leaves were covered in an icy shell! She quickly pulled out the lu-trasil and covered it with it. In the morning I took it off and saw an even worse picture: all the leaves were black...

Only where the apple tree grew did the potatoes not suffer: apparently, the frost had settled on its branches.

History of the Flood

I cut off all the blackened leaves, and the bushes gradually grew over with new foliage. But the rains did not stop, and on June 25 late blight appeared on potatoes weakened by frost, and black leg appeared on 10 bushes. These 10 bushes had to be dug up and thrown away, and the ground had to be processed (a glass of ash + 1 tbsp. copper sulfate).

For three hours, without straightening up, I cut out the diseased leaves, and then sprayed them with copper oxychloride, fortunately there was no rain in the evening. But the next day it started to rain again and for three days in a row it poured like buckets, and there was water in the furrows. Phytophthora appeared again, but already on the stems. What to do? Despair overwhelmed me, I began to think about how to save the potatoes.

I got ready and went to the pharmacy, bought bottles of iodine and several packs of trichopolum.

By evening the rain stopped, I again cut off all the black leaves, and then took the sharpest knife and used it to clear the stems of stains, cauterizing the sore spots with iodine. After that, she took a bucket, poured 10 liters of water, crushed 10 Trichopolum tablets and poured them into the water, added another 12 drops of iodine, mixed everything well and sprayed the area.

The weather was good for several days and the disease stopped. But then the rains started again, but I didn’t give up: when they stopped, I stubbornly sprayed the bushes again. And on July 18, a new misfortune occurred: at five o’clock in the evening a strong wind blew and such heavy rain poured down that all the potatoes fell to the ground, lay down, all the bushes were in the ground.

I no longer hoped for a harvest; it was simply impossible to enter the plot and cultivate the plantings. By August 20th the potato bushes had dried out and we started digging. The result pleased me; I did not expect this, to be honest, and did not hope for it. But, apparently, my efforts to save the harvest were not in vain. We dug up 30 buckets of good potatoes for food, four buckets for seeds and five buckets of change. In total, 11 buckets less than usual, but for such a year it was simply a miracle. For myself, I concluded: you should never give up!

The best varieties for cold summers turned out to be Nevskaya, Kiwi, Molly, Adretta. Let down: Rosara and Scarb. I didn’t even save them for seeds, I bought Charodey and Uladar instead, and my cousin gave me 30 Red Scarlett tubers, and my neighbor Sofya Kimovna gave me 5 Rogneda tubers.

So in 2018, all these varieties, despite the intense heat, gave a good harvest, and Rogneda was completely surprised: two buckets with the top of large, selected potatoes were taken from five bushes! I left one for this year; I really liked it. The sorcerer didn’t disappoint either: 15-16 pieces per lash. Only Kiwi was smaller - she loves water very much.
