It will take about 1.5 hours to prepare the components of the cake and assemble it. In order for the dessert to soak well, it must be left in the refrigerator for at least four hours or overnight.

Ingredients:

Biscuit base:

  • 6 eggs
  • 2.5 cups flour,
  • 1.5 cups sugar,
  • 1 teaspoon of soda, slaked with vinegar;
  • 500-600 g sour cream with a fat content of at least 20%,
  • 200 g butter,
  • 1.5 cups sugar;

Chocolate glaze:

  • 100 gr. butter,
  • 6 tablespoons cocoa,
  • 6 tablespoons milk,
  • 8 tablespoons of sugar.

Cooking process:

Working on the test will not take much time. Beat the eggs and sugar for 2-3 minutes until foamy.


Then add soda slaked with vinegar and flour. Knead the biscuit dough, which has a consistency similar to sour cream.


Now we will bake sponge cookies, from which we will later assemble a cake. On a greased or parchment-lined baking sheet, pour a teaspoon of the dough in the form of small cakes. You need to leave a distance between them, otherwise they will merge into one mass, since the dough is quite liquid. Bake cookies in an oven preheated to 180 degrees for 5-7 minutes.


Makes about 6-8 trays of cookies total. Place the pieces in a towel to prevent them from hardening.


While the cookies are baking, prepare the cream. Mix butter at room temperature with sugar.


We begin to add sour cream little by little, intensively stirring the future cream.


So add all the sour cream, the cream will end up smooth and quite thick. We put it in the refrigerator for a while.


When all the cookies are ready, you can start assembling the cake. Dip each piece in the cream and place it on top of each other in a circle.


As a result, we collect the cake in a slide. Leave a few biscuits to decorate the cake; the head and paws of the “Turtle” will be made from them.


All that remains is to prepare the chocolate glaze. Mix butter with milk, sugar, cocoa and place on very low heat.


Stir constantly for about 5 minutes until the glaze is smooth.


Spread hot chocolate fudge over the entire cake.


We make a head and paws from the left cookies, and use chocolate icing for eyes and a mouth.

  • cocoa powder - 2 tbsp. l
  • walnuts – 140 g
  • granulated sugar - half a glass

Stages:

1. In order for the turtle to be soft and not hard, use biscuit dough as a basis. How to cook it? Break six eggs into a container and beat gently with a mixer whisk. Beat until the mixture becomes fluffy and light in color.

Now add the baking powder here or add it along with the flour (read the instructions on the package at what stage it is added). Stir with a spoon.

On a note. You can use baking soda (1 tsp), which must be dissolved in vinegar in advance to avoid an unpleasant aftertaste.


Also, after this you need to add a couple of spoons of cocoa powder for a chocolate taste. And finally, add flour in parts (and possibly baking powder, many manufacturers recommend adding it along with the flour). Stir until the dough is smooth and without lumps.

The mass should not be too thick, but not liquid either, approximately the same as real sour cream. Do not add more than 2.5 cups of flour!

  • sifted wheat flour - 2 tbsp.
  • granulated sugar - 3 tbsp. (of this amount, 1.5 tbsp will be used for cream and glaze)

  • chicken egg - 6 pcs.
  • sour cream - 2 packs 600 ml
  • cocoa powder - 6 tbsp
  • butter 280 g
  • vanillin

Stages:

1. Break the chicken eggs into a bowl, separating the whites from the yolks. Squirrels must be placed in a cool place.


2. Mix the yolks with granulated sugar (1 tbsp.) and a pinch of salt. Beat with a mixer or blender at medium speed.

3. Roll each lump into a large flat cake and pierce it with a fork in several places. Fry in a dry frying pan on both sides until golden brown.


4. The result will be nothing like pancakes. You just have to cut the edges with a knife so that they turn out smooth and beautiful and all of different diameters.

Preheat the oven to 180 degrees. Line a baking tray with parchment paper and lightly (thinly) grease with a piece of butter.
Using two teaspoons (you can use a pastry bag), place small balls of dough onto the parchment. Be sure to retreat when laying out new cakes. During baking, the dough will increase in size and spread out and the cakes will stick together. But there is nothing scary here; no one will know about it in the finished cake except you. The flatbreads bake very quickly - about 6-7 minutes. I advise you not to go too far from the oven.

When forming the second batch of cakes, do not forget to make body parts for your turtle. A small cake for the head, 4 oblong ones for the legs and the smallest one for the tail. It is better to do this in the second or third batch of cakes, since everything is forgotten and at the last moment you may not have enough dough.
Bake the cakes until all the dough is gone.

Beat cold sour cream with a glass (180 g) of fine sugar and 1 tsp. vanilla sugar until smooth, smooth and fluffy.
If the cream turns out thick when whipping, you can add a little milk, as it will be too heavy for our delicate cakes.
Add cocoa and mix gently.

When the cakes have cooled completely, you can form them into a cake. To do this, you need to dip them well in the cream.

Place the cream-covered cakes on a large plate, forming a turtle shell. Try not to make it too high; it will be difficult to serve such pieces on a plate.
Having laid all the cakes completely, attach the head, legs and tail to the turtle. Grate the chocolate bar on a fine grater and sprinkle on the turtle. Use melted chocolate to make eyes, mouth and the rest.
