In many South American countries, agaric is consumed in the form of “popcorn”.

In India, Mexico, Peru and Nepal, amaranth grains are used to make traditional breakfast porridge.

In Mexico, the grains are used to make various sweets (usually by mixing with honey and lemon juice). On the Day of the Dead, Mexicans prepare various dishes from ashiritsa and place them in the shape of skulls. But besides such terrible serving, amaranth is consumed in more acceptable forms.

The pleasant nutty flavor of shiritsa allows it to be used for making porridges, pancakes, muffins, cookies and bread.

The ideal option for eating all the components of amaranth is raw!

How to cook amaranth correctly

Preparing amaranth is as easy as shelling pears.

  • The required portion of grain is poured into boiling water and cooked over low heat, stirring occasionally, for 15-20 minutes.
  • Strain the finished grains and you can eat them.

Shchiritsa is somewhat different from other grains. Its shell remains hard, and after cooking only the core softens. This cereal is not suitable for making pilaf, but can serve as a component of salads, cookies or soups.

In fact, there are only two rules that are important to follow when cooking ashiritsa. And they consist:

  • firstly, cook the grains in a large amount of water,
  • secondly, grind the amaranth grains to flour in a coffee grinder or mill.

Some chefs advise taking at least 6 (?!) glasses of water for each glass of cereal. But not because amaranth absorbs a lot of liquid. The fact is that during cooking a lot of gluten is released from the product (but not gluten!). If you take less water, then before serving, the finished grains will have to be washed to remove any viscous coating. Although many people use no more than 2 glasses of water for crushed amaranth... And it also turns out quite edible.

And, again, the healing properties of amaranth manifest themselves best when all its components are eaten raw!

The same squalene partially loses activity already at 45 degrees Celsius. This should be constantly remembered if you are expecting EXACTLY the therapeutic effect from this valuable product.

What to cook from shiritsa

This is the first time you’ve heard that you can make something edible from shiritsa and don’t know any recipes? Below we offer some delicious ideas from amaranth.

Amaranth and wild mushroom polenta

Ingredients:

  • 0.5 cups dried mushrooms (white or other);
  • 1 tablespoon oil;
  • chopped shallots;
  • 1 cup amaranth;
  • a little salt;
  • ground black pepper to taste;
  • a little thyme.

How to cook:

Add mushrooms to boiling water (a little less than 2 cups), cover and cook until softened.

Heat oil in another pan, add shallots and cook for about a minute.

Add amaranth, chopped mushrooms, liquid and bring to a boil.

Cook over low heat for about 15 minutes.

Add spices and continue cooking for another 15 minutes.

This dish serves as an excellent side dish for roasted poultry or stewed game. One serving will provide approximately 280 calories, 12 g protein, 42 g carbohydrates, 7 g fat, 160 mg sodium, 6 g fiber.

Shiritsa and blueberry porridge

Ingredients:

  • 1.5 cups amaranth;
  • 2.5 glasses of water;
  • 2.5 glasses of milk;
  • 2 tbsp. l. butter;
  • a third of a glass of heavy cream;
  • 0.5 cups blueberries;
  • 4 tbsp. l. honey

How to cook:

Pour milk and water over amaranth, add butter.

Cook over high heat first, and then over low heat for the next 20 minutes, stirring constantly.This porridge takes about an hour to prepare.

Add cream and blueberries to the finished dish and drizzle with honey when serving.

By the way, this breakfast recipe was developed by chef Eric Stein specifically for a culinary competition in 2009. The extraordinary taste of this dish amazed many.

The calorie content of a serving is 520 kilocalories, as well as 16 g of protein, 71 g of carbohydrates, 20 g of fat, 5 g of fiber.

Cake made from amaranth, nuts and bananas

Ingredients:

  • 1 cup boiled amaranth;
  • 2 cups millet (or gluten-free) flour;
  • 2 teaspoons baking powder;
  • 0.5 cups chopped walnuts;
  • mashed 3 bananas;
  • 0.5 cups of liquid honey;
  • 2 eggs;
  • 3 tablespoons oil;
  • vanilla sugar.

How to cook:

Stir in millet or gluten-free flour, baking powder and walnuts.

Separately mix bananas, honey, eggs, vanilla sugar and butter.

Add amaranth and dry ingredients mixture. To stir thoroughly.

Pour into prepared pan. Bake at 180 degrees for about an hour.

This healthy and nutritious pastry is perfect for breakfast or as a snack.

100 grams of the finished product contains about 170 kilocalories, 6 g of fat, 27 g of carbohydrates, 4 g of protein, 3 g of fiber and 75 mg of sodium.

Shiritsa salad

Ingredients:

  • amaranth leaves;
  • nettle leaves;
  • wild garlic leaves.

How to cook:

Pour boiling water over all the greens and chop. Add salt to taste. As a dressing, use vegetable oil with a few drops of lemon juice, sour cream or any other salad sauce.

Amaranth cutlets How to cook:

Mix potatoes, peas and amaranth, add grated carrots and eggs. Salt, pepper, bread in gluten-free breadcrumbs and fry in vegetable oil.

Shiritsa tea

  • For 100 ml of boiling water you will need a tablespoon of leaves (you can take fresh or dry) or acorn flowers, as well as a teaspoon of chopped mint or lemon balm.
  • Leave for 5-7 minutes.
  • Then add another glass of boiling water.
  • Add a little honey for taste.

So today we have AUTHENTIC cookies from the island of Cyprus! The recipe was kindly provided by the husband of my good friend Elena Makri - Lefteris Makri, straight from his mother's family recipes! Wow, it turned out to be a bestseller!

I allowed myself to edit it a little so that the composition contained less sugar and gluten, and made the absorption of cookies higher, and the harm from white flour less significant.

And I must note that the quality of the cookies was not affected!

So, the recipe:

Dough:

  • 3 cups of flour (I took 1 cup of white premium flour, 1 cup of whole grain spelled, 1 cup of half cedar from ground cake and almond)
  • 3/4 cups butter, ghee
  • 1\2 cups milk
  • 1/3 cup cane sugar
  • 1 yolk
  • 1 teaspoon organic soda (you can find out where to get this in the group https://vk.com/topic-138945347_36852905)
  • Salt to taste

Filling:

  • Finely chop 2 bags of dates (I had 200 grams already peeled)
  • 1 sweet orange (bittersweet) - take only the “meat”, without skin and membranes
  • Finely chopped tangerine peel (only the yellow layer, cut off only the part with essential oils with a sharp knife)
  • A handful of finely chopped roasted almonds (I used walnuts for the filling)

The dough is very easy to make. Melt the butter, add milk, yolk and other ingredients. Knead and leave for 30 minutes until the dough becomes elastic.

Preparing the filling:
1 tablespoon of water + 2 tablespoons of butter + heat and put the filling there, warm up.
Then make a sausage from the filling.

Roll out the dough. We put the date filling there and close it. We make it like dumplings or pies.
Separately, chop roasted almonds or walnuts for deboning. We will roll the cookies in them before baking.
After you have closed the filling into the cookie, take the beaten egg white, dip the cookie in it and roll it in nuts. Place on a baking sheet.
Bake on low heat, I baked at 165 degrees until slightly browned.

  2. Make gluten-free baked goods. Recipes like these will again require more water as you will need to create an airy texture to the bread. Starch can help with this. If the baked goods do not necessarily need to have an airy structure, simply completely replace regular flour with amaranth flour. This will already make the dish gluten-free;
  3. Add amaranth seeds to baked goods for texture and flavor. Lightly toast the grains in a dry frying pan before using, or simply add them raw to bread. Roasted seeds are great for making biscuits as they add flavor and crunch to the dish.

Now we’ll learn some fairly simple recipes for baking from amaranth. All of them are suitable even for those housewives who have never known how to bake.

Amaranth pizza


Ingredients:

  • egg - 4 pieces;
  • sour cream – 4 tablespoons;
  • mayonnaise – 4 tablespoons;
  • salt – ¼ teaspoon;
  • soda – ¼ teaspoon;
  • – 3 tablespoons;
  • mushrooms – 100 grams;
  • onion – 1 piece;
  • tomato – 1-2 pieces;
  • cheese – 100 grams.

Preparation:

Beat the eggs, add sour cream, mayonnaise, soda and salt. Mix everything well so that there are no lumps. Now slowly begin to pour the amaranth flour into the bowl, achieving a consistency similar to pancakes.

It's time to prepare everything for the filling. To do this, wash the mushrooms, cut them into small pieces and fry them in a frying pan along with the onions. Cut the tomatoes into thin slices so that it is convenient to place them on the pizza. Grate the cheese on a coarse grater or also cut into thin slices.

Heat a frying pan and add some vegetable oil to it. Next, pour the dough into it and place the filling on top. It remains to close the pizza with a lid and cook for 10-15 minutes over low heat.

Almost all children are crazy about pizza. And this, albeit somewhat unusual, will also appeal to them and will become one of their favorite dishes.

Amaranth bagels

Ingredients:

  • cottage cheese – 200 grams;
  • egg - 2 pieces;
  • sugar – 2 tablespoons;
  • soda – 0.5 teaspoon;
  • starch – 1 tablespoon;
  • - 2 tablespoons;
  • rice flour – 2 tablespoons;
  • cinnamon or vanillin - to taste.

Preparation:

Squeeze the whey out of the cottage cheese, place it in a bowl and add eggs, baking powder, sugar and vanillin (cinnamon). It is better to mix all this using a blender or grind with a wooden spoon until a more or less homogeneous mass is formed. Make sure there are no lumps in the dough!

Now gradually start adding rice flour, amaranth flour and starch. The consistency of the dough should resemble dumpling dough. Leave it covered with film for about 30 minutes.

Amaranth cupcakes


Ingredients:

  • – 100-130 grams;
  • sugar – 150 grams;
  • butter – 80 grams;
  • egg - 4 pieces;
  • honey – 1 teaspoon;
  • soda – 1 teaspoon;
  • vanilla sugar - to taste.

Preparation:

First, separate the yolks from the whites. Beat the first ones with regular and vanilla sugar. Now melt the soda and honey in a water bath. When the resulting mass begins to foam a little, remove it from the heat. Add honey, amaranth flour and melted butter to the beaten yolks.

Separately, you need to beat the whites and carefully fold them into the formed mass. The consistency of the dough should be neither liquid nor thick.

Now grease the muffin tins with vegetable oil and pour the dough into them. Just keep in mind that you shouldn’t pour it to the very edges, since during baking the “cake mass” will increase significantly in volume. The dish should be baked at a temperature of 200-220⁰ C for 30-40 minutes.

You can add nuts or raisins to the dough and decorate it to your liking.

Coconut cookies with amaranth

Ingredients:

  • egg - 2 pieces;
  • sugar – 2 heaped tablespoons;
  • coconut flakes – 50 grams;
  • – 3 tablespoons;
  • vanillin - to taste.

Preparation:

Beat eggs with sugar until their mass increases 3 times. Now add coconut and flour to them. Mix everything thoroughly but gently until a homogeneous mass is formed. It is best to do this with a wooden spatula.

Place parchment paper on a baking sheet and lightly grease it with vegetable oil. Separate small pieces from the dough and distribute them on a baking sheet. These unusual cookies need to be baked for only 25-30 minutes at a temperature of 180⁰ C.

Amaranth cookies


Ingredients:

  • yolk – 2 pieces;
  • sugar – 2 tablespoons;
  • sour cream – 2 tablespoons;
  • butter – 1 tablespoon;
  • starch (corn starch is best) - 2 tablespoons;
  • - 2 tablespoons;
  • baking powder – 1 teaspoon;
  • vanillin - to taste.

Preparation:

Mix sugar, sour cream, butter, yolks, vanillin and baking powder into a homogeneous mass. Mix starch and amaranth flour separately. Combine them with sour cream and sugar mixture. Mix everything thoroughly again until you get a dough.

Pinch off small pieces from it and place them on a baking sheet lined with parchment. These cookies need to be baked for only 30 minutes at a temperature of 180⁰ C.

Amaranth halva

Ingredients:

  • seeds or nuts – 300 grams;
  • - 200 grams;
  • water – 100 ml;
  • vegetable oil - 3 tablespoons;
  • sugar – 100 grams;
  • vanillin - great taste.

Preparation:

Heat a frying pan, pour a small amount of vegetable oil into it and fry the seeds (nuts) in it. Now grind them to the consistency of flour. Fry amaranth flour in a dry frying pan.

Add sugar to the water and heat until it boils. As soon as it boils, remove from heat and add vanillin and vegetable oil to the resulting syrup. Mix everything thoroughly. Next, add seeds and fried flour to the resulting mass. Mix well. The consistency should be a very thick dough.

Now put the halva on parchment and put it in the refrigerator to cool and harden.

The delicacy is completely ready!
