To be honest, before the birth of a child, I had never cooked minced meatballs with rice, they reminded me of fresh table food from school and kindergarten. But, drawing up a diet for a child requires flexibility and reassessment of views, and since my little daughter is very fond of minced meat dishes, and completely refuses to eat side dishes in the form of cereals, I decided to try to cook meatballs for her with the addition of rice in sauce.

Running in front of me I will say that in my recipe the meatballs must be pre-fried. Quite a little, a little, a little, but the finished dish will turn out to be much tastier.

As a basis, I took several recipes from culinary forums. The test version of meatballs did not please me - during frying, they began to stick strongly to the pan. I had to literally rip them off with my teeth. The reason turned out to be in the starch, which is contained in rice. Of course, starch contains a high percentage of gluten, which is why my meatballs stuck to the pan!

The secret of tasty and juicy meatballs

Next time, I solved this problem with bread crumbs. The meatballs were fried quickly, and when finished, they turned out to be incredibly juicy, tender and well saturated with tomato sauce.

You can take any mince for meatballs, but I like the combination of pork and veal most of all. I do not use a bun in the recipe, since we will bread the meatballs in breadcrumbs.

Ingredients required:

  • Minced pork 250 gr.
  • Minced veal 250 gr.
  • Rice 100 gr. (+200 ml. Cold water)
  • Eggs 2 pcs
  • Breadcrumbs 3 tbsp
  • Tomato paste 2 tablespoons
  • Salt and spices to taste.
  • Bay leaf, allspice, ½ onion

Cooking step by step

You need to cook rice in advance. For meatballs, it is best to take round-grain rice with a high gluten content, which is used to make cereals, risotto, pilaf, and sushi. Fill rice with water, standard 1: 2, in our case 100 gr. dry rice and 200 ml. water.

Bring to a boil, reduce heat, and cook until the water boils away. We turn off and use the rice for its intended purpose.

In a large bowl, combine the two minced meat, eggs, rice, salt and spices.

Mix well the minced meat for meatballs with a spoon, or with your hands, so that all the ingredients "make friends".

Then we proceed to the formation of our meatballs. We moisten our hands with water, pinch off minced meat the size of a chicken egg, and form small flat balls.

Roll each in breadcrumbs and place on a plate.

Heat vegetable oil in a frying pan, and fry the meatballs on each side for no more than 1 minute.

We shift the blanks into a saucepan, add bay leaves, half an onion and a little allspice.

Cooking the sauce

Let's start with a classic recipe that is often present on the menu of kindergartens, and just in home cooking.

Ingredients:

  • minced meat - 500 gr
  • rice - 150 gr
  • chicken egg - 1 pc
  • medium onion - 1 piece
  • salt, pepper - to taste
  • flour - 2 - 3 tbsp. spoons
  • carrots - 1 pc
  • tomato paste - 4-5 tablespoons
  • sugar - 1 tbsp. spoon
  • paprika - 1 tbsp. spoon

The difference between meatballs with rice and the same is that they require pre-frying to maintain their shape and density. And hedgehogs do not need this, they should look lush with well-visible rice, a kind of mess, and in my opinion, they are prepared much easier. But the meatballs are a bit tastier.

So, to cook them, finely chop the onion. I take half a medium onion to add to the mince and save the other half for the sauce. My husband is not a big fan of onions, so I put it to a minimum. If you like onions, you can take more.

I have minced pork + beef. I mix it with chopped onion, rice and egg. I do not forget to salt and pepper.

As for the rice. Some people prefer to pre-boil the rice for 10 minutes until half cooked. But I don't, because rice and so it will be cooked in those half an hour while the dish is stewed.

Therefore, you can safely add uncooked, the only thing this leads to is that the meatballs will turn out to be slightly drier inside. For example, this does not bother me, because it will still be unrealistically tasty.

But, decide for yourself, as it is more convenient for you, and do it, just see that the rice does not boil at all and remains dense.

Mix everything into a homogeneous mass. You should get a beautiful, fragrant minced meat.

We begin to form meatballs.

We collect the minced meat with a spoon and roll a ball out of it between the palms. They should be about the same size so that it does not happen that some of them will be ready, and too large ones will remain soggy.

If you moisten your hands with water or oil before sculpting, the minced meat will not stick to your hands.

Then each ball must be rolled in flour and put on a cutting board. Roll lightly, without fanaticism.

So my delicious landing is almost ready for further cooking. The meat balls will need to be fried with small amount oils so that they “grab” and keep their rounded shape. If you don't, you will end up with hedgehogs. 😊

We put our meatballs in the pan. Fry over low heat, turning over to another barrel.

Our goal is not to fry them until tender. Just brown a little. Turn it off and leave it that way for now.

It's time to make tomato sauce. I don’t really like to dirty a lot of dishes while cooking, but the recipe requires preparing the sauce in a separate container.

To do this, put chopped onions and finely grated carrots in a pan, fry until soft and light golden brown.

When this happens, add the tomato paste. Since tomato paste itself is neutral and just has a tomato flavor, we immediately add sugar to it and salt it.

You can pepper to taste. And add paprika here. It will give the sauce an even richer red color, so spare it. You can put a tablespoon with a hill.

Pour boiling water into the frying about 2-3 glasses. When you’ve already zoomed in on the recipe, you’ll know exactly how much water to add to your cookware.

Next, be sure to try it (!) And add salt and pepper to taste. You can also add aromatic spices. For example, I like to add some suneli hops or dried basil and garlic. You can add fresh crushed garlic, but its smell is not for everybody.

And pour our fried meat balls with gravy.

The gravy should completely or almost completely cover them. At first it may seem like a lot, but I assure you that after 30 minutes of stewing, even with the lid closed, it will at least halve.

So, cover the meatballs filled with gravy with a lid, set the smallest fire and simmer until cooked. This process takes about 25-30 minutes, the minced meat is cooked very quickly and the rice that we put inside will just have time to cook.

If the rice was previously boiled until half cooked, then the cooking time can be reduced to 20 minutes. This should be enough.

In half an hour, the meatballs are ready. My sauce thickened and not much of it turned out. More could have been done.

For a side dish, you can take crushed or whole-boiled potatoes, and buckwheat, pasta, pea puree are also suitable. How fragrant and beautiful they are!

I'll break one ball to show you. The rice is completely cooked inside. The meatballs keep their shape, they are plump and deliciously delicious! Both adults and children will be delighted.

Minced meatballs in sour cream sauce

Whoever has never tried meat balls in sour cream sauce has lost a lot! It is fantastically delicious, and if you have a positive attitude towards sour cream, then this dish is for you. They are so delicate, they just melt in your mouth. 👍

Ingredients:

  • Homemade mince - 500 gr.
  • Dry rice - 50 gr.
  • Egg - 1 pc.
  • Onion - 1 piece small.
  • Carrots - 1 pc.
  • Sour cream 15% - 300 gr.
  • Boning flour - 2 tbsp. l.
  • Salt and pepper to taste.
  • Hmeli-suneli (or other seasoning for meat) - 1 tsp. with a slide.

In the previous recipe, I did not boil the rice until half cooked. But this time I decided to boil it to make a very tender and juicy dish.

Boil the rice as follows - rinse it through a sieve with running water and then place it in a saucepan.

Pour water, preferably boiling water, so that it is completely covered. Add a little salt and put on a small fire. Bring to a boil, stirring constantly, the rice is inclined not only to "run away" from the dishes, but also to stick to it from below and to the walls. Therefore, we stir actively, do not let him vandalize.

After boiling, cook for 7-10 minutes.

As soon as the rice has absorbed all the water, turn it off. Let it stand for 10-15 minutes, let it cool down at least to a very warm state.

We mix minced meat (I have pork + chicken), semi-boiled rice in one bowl, break one egg, salt, pepper and I add a spoonful of hops-suneli. It will be very fragrant!

Mix everything together until smooth. Next, pick up the minced meat with a spoon and, rolling between the palms, form balls.

They should be small. Approximately 4-4.5 cm in diameter. And I immediately put them in a skillet with high boots, with a little oil. And I start frying over medium heat. It is necessary that they "grab", so I additionally close them with a lid.

Fry until a little gold and turn over to another barrel. I do it with these silicone kitchen tongs, very convenient.

You do not need to fry until tender, just brown.

Put the finished balls in a separate bowl. Or you can take a separate pan for gravy, as I did in the first recipe.

I rub the carrots finely, chop the onion.

I send them to the pan, add a little oil again. By the way, instead of vegetable, you can add creamy, it will be even tastier.

Fry until lightly golden, not allowing the vegetables to fry too much. You need to stir. And we spread the sour cream.

I have seen recipes where only 3 tablespoons of sour cream are added. In my opinion, this is not enough, it turns out water-water, not sauce. Add more, there won't be much, but the sauce will turn out to be rich and incredibly tasty.

Mix sour cream with vegetables.

And we add cold water, I added 2 cups, but I have a large frying pan. Add enough water so that the meatballs are almost completely covered. Be sure to salt the sauce, pepper if desired and try to correct the taste.

Awesome sauce, in it the meatballs will turn out great and very juicy!

We put them in the sauce and put them on the stove, under the closed lid. After boiling, simmer over the lowest heat for 20 minutes.

During this time, the gravy will thicken a little, saturate our minced meat balls.

It remains only to submit. I have pasta on a side dish, which I pour with sour cream sauce, and put the meatballs on top. A little fresh cucumber and a great lunch is ready!

Here, after the last preparation, I left extra ones that did not fit into the pan, and I froze them until the next time. It is very convenient to stick it on, freeze it, and then use it in haste.

Frozen ones also keep their shape well.

Fry chopped onions with grated carrots in a pan until light golden. I put the meat balls in the same place.

I need them to melt a little and grab. It will take about two minutes, I will not fry until black.

Like this, I roll them from side to side to a slight blush. Fry on butter for a creamy taste.

Now I'm making the sauce. Pour all 500 ml of cream into a frying pan. Salt and pepper the sauce, add your favorite seasonings. I take some hops-suneli.

Be sure to try the gravy. It should be creamy, tasty and not bland. I will not dilute the gravy with water, I like it. when it is saturated.

You can take cream of a lower fat content, it will also work out well, although not so thick.

Over low heat, stirring regularly, bring our gravy to a boil. It is imperative to stir, the cream loves to stick to the walls and to the bottom of the dish and will try to fry it.

At the same time, pour in finely grated cheese, it will harmoniously complement the taste of the sauce. Cover with a lid and cook over low heat for 20-25 minutes.

Continue stirring occasionally during cooking. The finished gravy will slightly decrease in volume and thicken - what you need.

Are meatballs without rice? It's over. In principle, any of the recipes that I showed above can be used without adding rice to the minced meat. And it will turn out awesome!

  • Tomatoes in their own juice - 650 ml. (1 can).

  • Ground coriander - 1/2 tsp
  • Bay leaf - 2 pcs.
  • Salt and pepper to taste.
  • Dried garlic - 1 tsp

So, we take minced meat, any homemade. I have pork + chicken + onion. Everything is twisted together. Unsalted minced meat.

Before making meatballs, I salt it, pepper it, I can add nutmeg or seasoning for meat to taste, directly into the minced meat. Mix well. I don't add rice.

I roll the balls and finely chop the onion and start frying. The meatballs come first, I roll them over and fry them in a little oil until they lightly blush.

And immediately I spread the onion to them. I fry them together for another minute or a half, the onions also turn golden.

Stir, bring to a boil and taste. Having tried it, I'm already looking at how to correct the taste along the way - maybe I need to add a little salt or, on the contrary, add sugar. Feel free to use it for flavor correction.

Add sour cream and milk warmed to a high temperature, as well as spices to the pan. The mixture must be constantly stirred.

Slowly bring the mixture to a boil (stir constantly), give it a slight gurgle for 5 minutes, then turn it off. The sauce will thicken slightly.

Pour it into a baking dish, it should completely hide the cabbage and meatballs.
