Made this cake for New Years. They ate it quickly, even though it is pretty big :).

Ingredients:

For test:

flour - 350-450 g;

butter or margarine - 250 g;

sugar - 220 g;

sour cream - 200 g;

baking powder - 1 teaspoon;

a pinch of salt for filling pitted cherries - 1 kg.

For sour cream:

sour cream (20-30%) - 700 g;

sugar (or powdered sugar) - 250 g;

vanilla sugar - 10 g.

For decoration:

chocolate (optional)

Cooking:

Drain the cherries in a colander and let the cherry juice drain well.

Cooking dough. Combine sour cream with baking powder and mix. Beat softened butter until fluffy with a small pinch of salt. Add sugar and beat well again. Add sour cream and mix. Add the sifted flour and knead into a soft dough. Wrap in cling film and put in the freezer for 15 minutes or in the refrigerator for 30-40 minutes.

Roll each ball into a 20x7 cm rectangle (depending on the size of the dish or tray where you will put the cake). Lay the cherries close to each other. And pinch the edges well. Put the resulting “logs”, seam down, on a baking sheet covered with parchment.

Bake for 15-20 minutes at 200°C.

Remove the "logs" from the oven and cool.

Prepare sour cream. Beat chilled sour cream with sugar for 15-20 minutes, at maximum mixer speed, until thickened and increased in volume. Sour cream is best to take fat or use a thickener. Put 5 logs on a dish and grease well with cream. Each subsequent layer of the cake will be one less log, all layers are well smeared with cream.

Decorate at your discretion. Put it in the refrigerator for impregnation for 10-12 hours (I did it in the evening and it was soaked until the morning).
