To prepare lobio, we need the following set of products:

  • dry red beans - 350 grams;
  • large carrots - 1 piece;
  • onion - 1 piece;
  • tomato paste - 3 tablespoons;
  • fresh garlic - 3 large cloves;
  • fresh parsley - a bunch;
  • vegetable oil - 4 tablespoons;
  • spices "Hmeli-suneli" - 1 tablespoon;
  • spices "Mixture of peppers" - 0.5 teaspoon;
  • salt - to taste.

How to cook beans with vegetables in a pan

If you decide to cook such a stew of beans with vegetables, then you need to take care of such a product as beans in advance.

Pour the prepared amount of beans with cold water so that it covers the beans by 4-5 centimeters. We will soak the beans for at least 12 hours. If you buy beans from the store and don't know exactly when they were harvested, it's best to soak the beans for 24 hours. We change the water a couple of times for clean water.

After soaking, drain the water from the beans and rinse it under running water. We shift the product into a saucepan and fill it with clean cold water so that the liquid covers the beans by 3 centimeters. Close the pan with a lid and cook the beans over low heat for 1.5 hours.

Peel a large onion and cut into quarters. Cut each piece into strips.

Carrots should be large, as this ingredient is one of the main ones. We clean it and three on the largest grater. I prefer to grind the root vegetable on a grater for Korean carrots.

Pour vegetable oil into a frying pan and put onion on it.

Fry the onion until it becomes translucent. Add sliced ​​carrots.

Saute vegetables together for 5 minutes.

Salt the beans 5 minutes before the end of cooking.

Add the beans to the fried vegetables along with the remnants of the liquid in which they were cooked.

The broth should cover the vegetables by half. If it is not enough, then add plain water. Add 3 tablespoons of tomato paste.

Mix the contents of the pan and add "Hmeli-suneli" and a mixture of peppers.

Close the pan with a lid and simmer the contents for 15 minutes over medium heat.

Wash a large bunch of parsley and finely chop the leaves. Crush the garlic with the flat side of a knife and chop. Add vegetables to the rest of the products.

Mix everything thoroughly and turn off the fire.

In order for all the ingredients to fully exchange flavors, let the dish brew for 15 minutes under the lid.

Rinse the soaked beans again, add fresh water and cook over medium heat until soft, that is, about 50 minutes. It should be understood that if you did not find time for soaking, then the cooking time of the beans will increase to 1.5-2 hours.

Strain the liquid from the cooked beans and set aside for a while.
