Lazy dumplings on semolina

Ingredients:

  • cottage cheese - 250 g;
  • 1 egg;
  • 5 tablespoons of semolina;
  • 2 tablespoons of sugar;
  • 5 tablespoons of flour;
  • 50 g butter;
  • 1 bag of vanilla sugar.

Preparation:

  1. Grind the butter with sugar, pour in the beaten egg, vanilla sugar, stir until the grains dissolve.
  2. Add curd mass, grated on a sieve, salt, mix everything.
  3. Pour semolina, mix well.
  4. Remove the dishes with the dough in a warm place for 1 hour so that the semolina swells and increases in volume.
  5. Knead the dough, sprinkling flour on the table surface until the desired density.
  6. Roll the sausages, divide into separate parts.
  7. Cook dumplings, serve with sour cream or condensed milk.

Lazy cottage cheese dumplings are one of the few cottage cheese dishes that even those who are not fond of cottage cheese are happy to gobble up. Which is not surprising at all, because they turn out to be light, but satisfying and very, very tasty! Moreover, it will take you no more than 30 minutes to cook. Agree, this is a decent saving of time, given that the taste of the dish only benefits from such a "simplification". I propose to make the simplest lazy dumplings from cottage cheese. A recipe with a photo step by step will certainly come in handy if you do not make such dumplings so often or for the first time, and have not yet had time to learn all the subtleties of the process. Delicate, moderately sweet and aromatic, they keep their shape perfectly and do not fall apart during cooking. Very tasty!

How to make lazy cottage cheese dumplings

We take a cup suitable for kneading dough and send cottage cheese into it. I made lazy dumplings with different curds and, to my taste, they are softer and softer with more fatty ones - from 5% and more. Excellent dumplings come out of the curd mass, but here it will already be necessary to adjust the amount of sugar.

Pour sugar to the cottage cheese, add some salt to it.


Add eggs to a cup and grind the mass until smooth. I like the grains of cottage cheese in the dumplings to be noticeable, so I just stir everything with a whisk. For a less grainy mass, it is better to use a blender.


Add vanillin to the sweet curd mass. Do not put more than half the bag - the curd dough will taste bitter.


Following the vanilla, sift the flour into a cup. I do not write the exact amount, because even with cottage cheese from one manufacturer it always turns out differently. This time it took me exactly 1.5 glasses.


The dough should be soft, grainy (if you haven't used a blender). It will stick to your hands, so you definitely need flour for dustiness when working with it.


As soon as the dough is ready, you can put water for cooking the dumplings, they will form very quickly. Cut off a small piece from the dough, dust it with flour, roll it into a tourniquet. Adjust the width and height of the rope at your discretion, depending on what size dumplings you want to get.


Next, we cut the tourniquet into approximately equal pieces. In principle, already in this form, lazy dumplings can be sent to boiling water for cooking. But if there is a desire and time allows, you can quickly make them a little more accurate. We turn the sliced ​​pieces of curd dough with the cut down and, dusting them with flour on both sides, flatten them a little. The resulting dumplings are oval in shape with a small depression in the middle.

Now, with a fork, give these oval dumplings a relief. We do not press the plug strongly, only to indicate "streakiness". This is all very fast.


It took me just 10 minutes for a batch of 40 dumplings. The second batch went to freeze.


The water has just boiled at this point, we dip the dumplings into it and add some salt. Gently stir them so that they do not stick to the bottom and do not stick together, and cover with a lid.

As soon as they boil, remove the lid, let it boil for a maximum of a couple of minutes and you can take it out. In many recipes I read that when cooking lazy dumplings need to boil for 5 minutes. In my opinion, this is too long! During this time, they have time to boil too much, become sticky and too soft (this is not good for dough products). Dumplings should be cooked like pasta - to the state of "al dente". Then they turn out to be really tasty!
