The Alekseevsk Dairy Canning Plant has inexhaustible experience and a unique contribution to the Russian history of the early 20th century. It is one of the few enterprises in the dairy industry that has grown and developed to this day, thanks to the indefatigable human willpower and desire to bring what has been started to the end. At the end of the 30s, the Combine was a pioneer in the introduction of dry types of dairy products into use: milk powder, dry cream, dry potatoes and dry cottage cheese, egg powder. These products had a double side of recognition: the mature generation looked with caution at new technologies and experience in drying raw milk, and the young population simply did not have time to enjoy all the delights and ease of use of these products, the war began.

The plant continued to work with the forces of women and adolescents, and provided tremendous support to the starving population, the army, the children of the besieged Leningrad. After all, dry products were stored longer, transported easier and did not require heavy flasks, as for storing milk or cream, not to mention temperature requirements. Of course, initially manual labor and help from large livestock - horses, bulls - prevailed at the plant, and they laid the foundation for the plant from scratch. In the post-war years, there was an active formation of the plant, reorganization changes in the form of a merger of several enterprises in the region, the quality of products was improved, and the social direction developed. The Alekseevsk Dairy Canning Plant achieved great success in the eighth decade, when German Sergeevich Borovikov was its head (1983 - 1988). Then the plant already had honorary award State quality mark.

Modern activities of the enterprise

However, the difficult nineties and the crisis two thousand almost ruined the excellent economy, the salvation was the entry in 2002 into the structure of JSC "Tatarstan sote". Investments in the replacement of equipment, the purchase of milk tankers and special equipment for more than 50 machines, the launch of a workshop for the processing of soybeans and sausages, the introduction of a cheese whey drying line, the improvement of lines for the processing of whole cow's milk, the release of butter, sour cream, cottage cheese, dry dairy products, the establishment of production their own packaging, made their purpose - the enterprise began to rapidly gain momentum in the production cycle.

Drying plants are operating at full capacity, delivering up to 23 tons of dry products per shift in the form of dry whole milk of 25% fat content, skim milk, dry whey, and classic milk powder. About 200 tons of fresh milk are imported per day for processing. The annual output, for example, of powdered milk began to amount to more than four hundred thousand tons of the finished product. In the butter shops, the lines for processing high-fat cream have been improved. Sausage and meat semi-finished products are produced in a decent range of up to three hundred kilograms per shift.

The plant has its own pig farm, raising young pigs in the amount of more than one thousand eight hundred heads.

A whole chain of raw materials supplies from the best dairy factories of Almetyevsky and Mamadyshsky, Kazansky and Apastovsky, from LLC Yasnaya Polyana and the collective farm "Rodina" was launched, the trend of expanding the range of products and, of course, product distribution zones throughout the Belgorod District - Krasnensky and Alekseevsky districts, Gubkinsky and Rovensky, Krasnogvardeisky and Veidelevsky, as well as districts of the Voronezh region.

The Alekseevsk Dairy Canning Factory makes a huge contribution to the development of the region, it is a branch of a large association LLC UK “Prosto Moloko”. Also, in 2015, the plant is already a member of the Association of Producers and Consumers of the Fat and Oil Industry as one of the promising and leading enterprises of the Belgorod Region.

Employees

Once upon a time, the company employed about sixty employees, whose manual labor led the dairy farm without interruption, but with great efforts. Modern installations of equipment, timely training of personnel made it possible to improve the organization of labor, increase productivity several times and open up the internal reserves of the plant for full implementation. Thus, the AMKK personnel today numbers more than three hundred qualified and responsible employees who love their work and value their contribution to the overall economic development dairy industry.

Awards

Improving the quality characteristics of the products of the Alekseevsk Dairy Canning Plant directly affected the receipt of the best awards, honorary diplomas and certificates of regional, Russian and international level. So, "Whole Condensed Milk" has a gold medal, a diploma of the 1st degree of the Agroindustrial Exhibition of Russia in 2000 and 2002, is a laureate of the "100 best goods of Russia" together with the products "Condensed cream with sugar" and "Condensed milk with sugar". The Peasant Butter produced by the plant won a bronze medal at the 2003 All-Russian Food Industry Competition. Milk Powder 25% Fat Deservedly became a laureate of the 100 Best Russian Products program.

Whole milk products are produced with different fat content in the form of 2.5 and 3.2% according to the classical technology. Aromatic fermented baked milk, kefir, snowball, yoghurts with natural fruit fillings are delicious. The line of cottage cheese is distinguished by both simple cottage cheese of 9% fat, and sweet cottage cheese masses with prunes, raisins, dried apricots, there is even cottage cheese with salt. Powdered milk products in the form of low and high fat cream, dry cheese whey and powdered milk replacer for animal feeding.
New is the line of assortment items with live bifidobacteria - fermented milk drinks "Bifidok" and "Bifilife", which have a high biological value and a complex of active substances to improve the microflora of the human body and its recovery after diseases.

Products that are more and more attractive in terms of quality and physical and chemical indicators are constantly being developed. industrial use for the confectionery and bakery industries. Half of the condensed milk samples from St. Petersburg stores do not meet the requirements of the GOST declared on the packaging, and one turned out to be a fake at all - it was made with the addition of non-dairy fats. These are the results of the next inspection of the consumer organization "Public Control".

"Public control" bought 10 samples of condensed whole milk with sugar in the city stores and tested them in the laboratory of the Test-St. Petersburg Federal Budgetary Institution. Violations were found in half of the products.

Experts recognized one sample as a fake - it is condensed milk from Verkhovsky Dairy Canning Factory. In addition to the discrepancy between the four physical and chemical indicators provided for by GOST, experts found non-dairy fats in it.

We draw conclusions about the presence of non-dairy fats in the product by analyzing the amount of volatile fatty acids - butyric nylon, caprylic and some others. The main indicator of milk fat is the content of butyric acid, which is not found in any other fat. According to the standards, it should be from 2.4% to 4.2% in milk. In the sample from ZAO Verkhovsky Dairy Canning Plant, butyric acid was only 1.9%. This means that non-dairy fats are also present in the fat phase of the sample, ”says Maria Malykh, head of the chromatography sector at Test-St. Petersburg.

According to Tatyana Pilipenko, the milk fat in this product can be diluted with beef - this can be indicated by the increased content of stearic acid, which is characteristic of this particular fat. It gives out a fake and a very low cost - 29.80 rubles for a plastic package weighing 270 g.

In four samples, the mass fraction of protein was almost two times lower than the GOST standard. So, at a rate of 5% in the sample of TM "Sladezh" from JSC "Belmolprodukt" (Belgorod region, purchased in the store "Fix-Price", Krasnoputilovskaya st., 34) it was 3.68%, in the sample from JSC " Korenovsky Milk Canning Plant "(Krasnodar Territory, purchased from Dixy at Krasnoputilovskaya St., 38) - 2.93%, in the product from Verkhovsky Milk Canning Factory (Oryol Region, purchased from A. And, the market on Salova st., 52) - 2.84%. And the lowest protein content - 2.22% - was recorded in a sample of TM "Glavprodukt" from the same CJSC "Verkhovsky Milk Canning Plant" (purchased from the store "Semishagoff", Stachek Ave., 105, building 1) ...

According to the chief nutritionist of St. Petersburg and the Northwestern Federal District, doctor medical sciences Vladimir Dotsenko, studies show that most metabolic disorders leading to various diseases are associated with a lack of protein. The synthesis of enzymes and protective immune bodies is disrupted, the human body weakens.

For us, northerners, dairy products are the best source of protein, minerals, especially calcium. And manufacturers are engaged in veiled theft, impoverishing a useful product! - says Vladimir Dotsenko.

Besides. the same 4 samples of condensed milk did not pass the test for the protein content in dry skimmed milk residue (SNF) - an indicator of the quality of this product. According to the requirements of GOST 31688-2012, the protein in SNF should be at least 34%. The analysis showed that in a sample of TM "Sladezh" it was 17.8%, in milk from Korenovsk - 15.7%, in a sample from ZAO Verkhovsky Dairy Canning Plant - 15.6%, and in a sample of TM Glavprodukt "(The same" Verkhovsky Dairy Canning Factory ") and 10.8% altogether. The fifth sample that did not pass the test for this indicator was condensed milk TM "Vologda dairy products" from CJSC "Nizhnekislyaevskaya dairy company" (Voronezh region, purchased from LLC "Ashan", Borovaya st., 47): the protein content in SOMO was only 27.5%.

According to public figures, some manufacturers have more than compensated for the lack of protein with water. According to the requirements of GOST 31688-2012, the mass fraction of moisture in condensed milk should not be higher than 26.5%. However, in the product TM "Glavprodukt" (CJSC "Verkhovsky Milk Canning Plant") it was 28.2%, in another sample from CJSC "Verkhovsky Milk Canning Plant" - 30.6%, and in milk from Korenovsk - 30% ...

Almost all samples of condensed milk, which were included in the "black list" this time, did not comply with GOST in several physical and chemical indicators at once, including the mass fraction of sucrose. According to state standard, it should be in the range from 43.5% to 45.5%. However, in the sample from Korenovsk it turned out to be 42.86%, in the sample from TM "Glavprodukt" - 42.76%, in the sample from ZAO Verkhovsky Dairy Canning Plant - 42.73%, and in the sample from TM "Vologda Dairy Products "- 41.31%.

According to the results of the examination, the tested samples of condensed milk of the following brands fully complied with GOST: Rogachev (OJSC Rogachevsky MKK, Belarus), O'Key (CJSC Alekseevsky Milk Canning Plant, Belgorod Region), Lenta ( JSC Lyubinsky Dairy Canning Plant, Omsk Region), Volokonovskoye (JSC Belmolprodukt, Belgorod Region) and Lyubimaya Classika (LLC Promkonservy, Smolensk).

"Public control"

The materials of the inspection "Public Control" sent to the St. Petersburg department of Rospotrebnadzor for taking measures.

Based on the results, the Office of Rospotrebnadzor in the Republic of Mari El brought Marimoloko LLC to administrative responsibility in the form of a fine of 100,000 rubles for the production and sale of fake condensed milk, in which milk fat was found only in trace amounts, says Vsevolod Vishnevetsky , Chairman of the Consumer Organization "Public Control". - A year after that check and the administrative punishment that followed it, we no longer see this fake condensed milk on the shelves of St. Petersburg stores. This is a concrete result that a public organization of consumers can add to its asset.

Where do daring ideas come from? What are the plans of the enterprise for the export of products? How does the plant support the authorities? IM: "Korenovsky Milk Canning Factory" was very lucky, because in 2002 it found its real owner in the liege-general director Andrei Avenirovich Labut (editor's note - General Director of the Renna Group of Companies). Now the holding includes two plants: Korenovsky and Alekseevsky.

"Alekseevsky" combine is more specialized in condensed milk, "Korenovsky" combine since 2005 has been actively developing whole milk production. Ice cream is our newest and youngest project. However, this project is one of the most successful in the dairy industry.

The plant also had difficult times: production was declining, reaching very small processing volumes, almost to zero. Then a new impulse arose, and our "Lady from Korenovka" appeared. Up to this point, Korenovskoe condensed milk was produced. The appearance of the Korovki iz Korenovka brand helped to distinguish itself from all other manufacturers and to further successful development.

I came to the company in 2010. At that time, the company employed 800 people. The volume of milk processing was 200-220 tons. By production volumes: whole milk production - 150 tons, canning production - about 180 tubes ( approx. ed. - a thousand conditional cans - equivalent to a ton, one conditional can is obtained from a liter of milk).

In 2010, Renna Group of Companies decided to start production in Korenovsk and enter the ice cream market.


DN: Did you invent the "Cow from Korenovka"?

IM: No. "The Cow from Korenovka" is the undisputed authorship of the General Director of the Renna Group of Companies Andrei Avenirovich Labut. In 2005, the enterprise received a certificate of registration of the trademark "Lady from Korenovka", but the production itself began earlier.

I came to the company when there was again a question about the development of the “ice cream” direction. It was previously produced in small amount, but then the workshop was closed.

All new projects are close cooperation: the technologist will not do anything without understanding how the equipment should work. I always got experimental lines, new projects. I am interested in achieving a result, launching it, adjusting it.


I have been in the ice cream industry since 1999, worked at both Russian and Italian enterprises, actively studied the specifics of the European market, worked with a number of well-known companies, including those involved in the production of ice cream since 1939. The Italians liked my ideas. And some of them have already found their embodiment in Korenovsk.

At Pyatigorsk "Cold" (ed. - famous brand since 1939) I worked as a mechanical engineer in an ice cream factory. I graduated from the "Stavropol Polytechnic Institute" in the direction - machines and apparatus for food production.


I've always been interested in technology food products because many in our family have worked in this industry. For example, my father worked at a meat processing plant for 30 years. My grandfather was in charge of an elevator, then a bakery combine. In my "home-baked" life, I did everything. Completely passed "meat processing" from primary to canning and sausage production. In parallel, I studied everything related to production: boiler room, compressor room, treatment facilities. The production complex is familiar to me from start to finish, because I “felt” it all with my hands, starting with the work of a loader, locksmith, adjuster, mechanic, etc.

FROM PRODUCTION TO MARKETING

DN: You also said that you worked in Italy.

IM: Yes. I graduated from the presidential program "Management training for the organization of the national economy." This was the very first set. This program continues to this day. After training on the basis of the most best universities under the "Management" program, there was an opportunity to undergo an internship in European companies based on the selection and interview results. There was a unique opportunity to see how foreign companies work, to try yourself in a real position. I worked as a development director for an Italian company.

As a production worker, I understood that not everything depends on the production itself, you need to understand both sales and marketing. Therefore, I went to learn how to write business plans, develop new types, calculate the payback.

DN: How did your career develop after the internship?

IM: In the presidential program, I got serious knowledge in the field of marketing. I firmly set myself the task that I want to go into sales, because I understood the entire production chain, but did not know why consumers did not take this or that product.

After the presidential program, I wanted to get a job as a trade manager at the Pyatigorsk refrigeration plant "Kholod". But I was hired on condition that I first prove myself at an ice cream factory, and only after that they were ready to consider moving to the commercial department. And then I completely immersed myself in "hardware": I built, launched, developed, expanded.

DN: Igor Vladimirovich, what did you say to the Italians that they took you?

IM: There was a heart-to-heart talk. I honestly shared my work results. Italians are leaders in ice cream: ideas, technologies, equipment. In the internship, everything turned out outside the box. The people who came with me ended up in the places where they agreed. And the company in which I was supposed to work did not confirm the agreement with the organizers. And I myself turned to the companies with which I worked, for example, "Tetra Pak", "Sidam", "Cattabriga", which greatly surprised the organizers. Thus, I managed to travel all over Italy: I visited factories where equipment is assembled and visited production sites.

And although Tetra Pak were not ready to take me for a long time, they devoted two full days to me. I communicated with all management: from the first person to the heads of individual production areas. The company also introduced me to its clients: small, medium, large ice cream industries.

Then the Italians actively helped me to negotiate with manufacturers. I was in Bologna, there is a famous manufacturer of equipment for ice cream parlors - "Catabridge"; then in Genoa at a family company that has been producing ice cream since 1939. I have done engineering for them. They liked my ideas and they even paid me.

After my return, our views diverged from the Pyatigorsk leadership, although we are still friends and communicate. By the way, there are many here from Pyatigorsk, from Stavropol, from the technical director, the head of the factory to the adjusters. I believe our team is the most qualified and knowledgeable in the industry.

IM: The Italians invited me to work under a contract. I was an engineer, and in Italy this is already like a status, for development and new types, and the contract allowed me to come or not to come to work, the main result is the most important thing in any work. We are still friends and communicate.

DN: Did you come to the position of General Director at Korenovsky Dairy Plant?

IM: Yes.

DN: What tasks do you set for yourself now?

IM: We constantly have new items. We send all our proposals to Rennes, the management company, for tasting. The last package contains a dozen different novelties: from new recipes, which are more economically interesting, to new products. For example, recently the Rennes company presented an absolute novelty - "Molonese".

DN: In addition to expanding the assortment, is the modernization of the enterprise possible?

IM: We have tripled in milk processing. During the season, the number of people is 2300. In addition, the productivity of one employee has increased.

There is a rule in the Renna group of companies and, accordingly, at KMKK CJSC - we do not start projects that have a payback period of more than three years. We strive for two years, and invest only our earned money. We have borrowed funds, but we need them for turnover, otherwise a gap arises - we pay for milk immediately, and we pay for finished products months later.


We launched the ice cream project with 5 million rubles, and paid for them in two months. In 2016, they produced 20 thousand tons, and in 2017 they again improved the result.

This December 2017, according to NIELSEN, in the category “PORTIONED ICE CREAM” in the Russian market - the Top Brand and the undisputed leader of the ice cream “Korovka Iz Korenovka”, which increased its market share to 8.9% in all regions with the strongest positions in the South!

A small production site in a few years turned into FNM-Real Ice Cream Factory.

This is our approach to reconstruction: we try to test everything first, to understand the reaction of buyers to our offers. We also launched the new product "Molonez" on the existing equipment, modified by our own forces. Have not spent a single ruble. There was only a local alteration of the site. And now, when we are already aware of the real volumes and what we need for this, we can safely buy production lines.

DN: Who invented Molonez?

IM: The idea itself belongs to Andrey Avenirovich, he is the company's chief marketing officer. Execution is a teamwork of technologists, production workers, we figured out how to do it when the concept was already clear. We have patented Molonez as an industrial design, and now it is a protected name and the product itself. The preparation was long and thorough, but now you can safely work.

DN: How do you plan to promote Molonez?

IM: We thought for a long time on which shelf it should be: on the dairy or next to the mayonnaise. Brand awareness helps a lot in product sales.

We have subsidiaries, our own supply chain distributors and are the most reliable feedback channel. We have analyzed the data and are already negotiating with retail chains. There is interest, there are preliminary agreements. There will be support, but working in networks is one format, as for retail outlets, we brand them. In addition, we decided to add product information to the Molonez jar.


DN: Where do you sell your products?

IM: Depending on the expiration date, the geography of sales is also determined. If we talk about condensed milk, then our group occupies a leading position in Russian Federation... Our market share is 25-26%. Condensed milk can be transported to the very outskirts, so we are represented everywhere. Moreover, not only within the Russian Federation, but also in the near abroad, the CIS, far abroad, there are supplies to the UK, Europe, America, China, Taiwan, Vietnam.

The second product that can also be sent far away is ice cream. Ice cream is not just an interesting product, it is also a solution to the balance of raw materials: there are periods when they have to buy milk and turn it into something useful. Ice cream, like condensed milk, can be put into a warehouse and stocked up.

This is our significant advantage, because during the period new year holidays many milk suppliers ask us to accept milk.

WORK WITH PROVIDERS

DN: How do you organize your work with raw material suppliers?

IM: Of course, we give priority to those who work with us all year round, who trust us. This is real partnership. Our partners and large agricultural holdings, with whom we have long-term respectful and friendly relations, and small milk producers, and the private sector. For example, now we are helping a farmer from a neighboring area: we have doubled milk production at its base. Milk production per day first reached 7 tons, then 10 tons, now we are planning 15 tons. We build a farm with him, we buy heifers. We help, absolutely not claiming a share of the property, he appreciates it. Such projects lead to the fact that we have mono-suppliers who will definitely not work with competitors. We never let our suppliers down, they know and appreciate it.

For example, when there were snow drifts with freezing rain, the "Olympic flame" got stuck, bread was delivered in military vehicles, and our milk trucks drove to each farm and took milk. We always fulfill our obligations.

Moreover, as you can see, we have a EuroNumber on the packaging of ice cream and condensed milk. We have passed a very serious audit of the European Commission. I was calm about our production, everything is fine here. But it was necessary to show that the production of raw milk takes place under appropriate conditions. It was a very serious test! And our agricultural producers passed it with honor.

DN: In the Krasnodar Territory, Korenovskiy Dairy Plant is the leader in the processing of raw milk. However, according to the CIMR, the deficit of raw milk for industrial consumption amounted to about 187 thousand tons in 2016. Do you feel a shortage of raw materials?

IM: The price for raw milk in the Krasnodar Territory is the highest when compared to the whole country. It is formed depending on the supply, therefore - yes, there is a deficit. The base price without VAT varies from 23 to 25 rubles. If we convert it into the physical price of fat and protein, then this is from 26 to 28 rubles.

At the moment, there is a surplus of milk. Usually at this time the price of milk rises, but now it is falling. The year is non-standard - due to a decrease in demand, customers need less dairy products.

DN: How many suppliers do you currently have?

IM: More than 30 large farms. The suppliers are different. There are about 200 private farms. We are not abandoning them, although the large ones have abandoned private farms, because there are many problems with them: unstable quality, production culture and decency.

An alternative supplier of raw materials is cooperatives, but we have not yet implemented this idea. It is they who can give the real volume of milk that is needed.

If there are only large farms, and there are no small ones, then suppliers will start to bend prices. In this regard, their competition is interesting for us: milk from the private sector is more preferable for the price. The question is how to ensure quality. This is a whole program.

DN: What quality milk do you need?

IM: The main volume is the highest grade. Please note that the packaging of our cottage cheese says that the shelf life is 14 days. This means that we have verified that this product can be stored for 21 days. It contains only milk, no preservatives or stabilizers. Its quality is ensured by the input raw materials and production conditions.


Previously, we had open baths in the curd shop, there was a yeast smell. Now the curd shop smells very tasty. The whole process is closed from start to finish. Minimum contact with food. Even the air conditioner is in a standstill, the air is cleaned, everything is conditioned and filtered. The product is packaged in a protective gas, and without any additional additives it calmly reaches the buyer.

IM: Export is not a bulk supply for us. We escort 300 million rubles annually.

Our main market is Russia and especially its southern part. In the south we are at home, they know us here.

Incidentally, there is a significant difference in tastes that have developed in different regions. When we came to Moscow with our kefir, we were told that it was too harsh. Although this is real kefir!

I often visit Moscow and buy products from different manufacturers, and so the Central part of Russia drinks unripe kefir or made with dry sourdough.

Our kefir on real mushrooms is gaining sharpness and taste. In this regard, now we have two recipes for kefir: southern and central.

They also began to supply milk to other regions. First we reached Voronezh, where they connected with our second plant, then decided to go to Moscow. But not in large network deliveries, but took outlets, which were considered indicators. We sold ourselves, because it is unrealistic to work with distributors, because there are tough, unbearable conditions for the manufacturer. Moscow is a promising market, but it is difficult to take place there.

Our sales geography is very wide, and condensed milk and ice cream are constantly increasing their presence. We are very well received in China. This ice cream of ours was presented to the Chinese leader.

DN: Do you cooperate with the Russian Export Council organization?

IM: Yes. There is a department of foreign economic activity at the Korenovsky Milk Canning Plant. This is a group of specialists who are engaged in declaring. We even installed our own program so as not to contact external companies. This is economically beneficial: the program was justified in less than six months.

We had to protect our intellectual property, so we know how to behave in foreign markets.

Exporting to China, we were one of the first to resolve the issue of supplying dairy products in accordance with veterinary rules and regulations. Therefore, sometimes we ourselves share our experience with the export center. We are on very good terms, and we plan to further develop our cooperation. There is real support.

We are interested in programs that allow us to protect intellectual property rights in foreign markets; and there is a special program to support Russian exporters by the government.

DECLINING DEMAND

DN: Igor Vladimirovich, do you notice a decrease in demand for dairy products?

IM: This is a temporary trend. I was at the presentation of the Institute of Nutrition: we, Russians, are malnourished by those physiologically recommended norms of dairy products, as well as the rest. And this is the health of the nation! The State Duma is preparing amendments to the law.

Close attention is now being paid to provide us with a quality diet, from raw materials to finished products. There was a deficit in the Soviet Union, but if you look at the volumes, then the entire frozen industry has not yet approached the volumes that were then in the RSFSR. Likewise with meat, milk.

Our partners of the agricultural holding "Kuban" in Ust-Labinsk have a presentation that confirms how deeply they have gone into science. They deal with the issues of herd reproduction. Surprisingly, they developed non-genetically modified corn! It turned out that there are scientists, opportunities, and businesses willing to invest in such research.

When it comes to dairy products, price is an important consideration. In this regard, we do not cancel the film packaging of kefir and milk, which is sold at a low price. In addition, trade networks do not require certain commercial conditions for this film milk by law. The population can afford these products, and the producer can earn.

If the buyer does not buy dairy products, then there is a surplus and the price falls. Dairy producers are becoming uninterested in investing in their development. Vicious circle.

The minister Agriculture Krasnodar Territory clearly said that all projects to support dairy farming will be implemented. All professionals in this field are now earning, developing, expanding.

It helps that in the Krasnodar Territory there has always been an agreement that was supervised by the Ministry of Agriculture: how much a milk producer, processor, “trade” should earn. The equilibrium state was recommended. There are tools and leverage to keep everyone in line. Of course, the main regulator is the market, but the authorities can bring order to the region. In the Krasnodar Territory, dairy farming was preserved precisely because they paid attention and talked with all the participants in the chain.

DN: Have you introduced the Mercury system?

IM: We have advanced quite far in this project. The easiest way is to implement the production stage. We asked Rospotrebnadzor why the veterinary certificate should be on the sales shelf, even if it is electronic. It would be better if he stayed at the production stage. We are not against progress, but the system is still incomplete.

In addition, in this regard, it turns out that it is necessary to abolish HACCP, the quality management system.

Nevertheless, we have created a working group, we are preparing for the introduction of "Mercury", because it affects all areas. We see difficulties and threats not only for ourselves, but especially for small suppliers and retail outlets.

We held a meeting of the entire company regarding the Mercury system in order to synchronize who at what stage of development, because everyone has their own specifics in this project. In order to launch Mercury, we need to launch warehouse automation, introduce new processes, purchase marking equipment, which we have been doing as planned for more than a year.

Now we have started the stage of implementation on canned food, it is simpler there: there is no such dynamics and speed that is needed in the whole milk production workshop, because milk poured into bottles or bags should go straight to the car, and also ordering, quantity matching, etc. In addition, it happens that it fell, spilled, the client did not accept, the correction of documents, etc. If we add certificates to this ...

There are a lot of technical and organizational nuances, a lot of difficulties associated with working moments that no one knows how to solve. For example, now on a unit of production it is necessary to apply information using a barcode about the production date, end date, batch number. It can be printed, but how can you do it online, if not all products end up on the conveyor on which you can put the printer.

As a matter of fact, we have to build another workshop in order to technically implement all the requirements, and this is a large investment cost. In addition, there are still many unresolved issues: accounting of goods in the warehouse, address storage, time of entering information about production, labeling, meeting the requirements of networks, organizing a smart warehouse WMS.

WMS is an automated accounting system that uses barcode scanning to determine the position, place in the warehouse, date, attribute, loading list. The program itself determines what is missing, signals that the order is not closed or an error has occurred, instant inventory, etc. How should the storekeeper control and provide information? This year we had over 70 storage warehouses throughout Russia. We managed a warehouse located in Chelyabinsk, from here we issue an online document to each outlet. Each store, and there are 5 thousand of them, sends orders directly to the base, they need to be summarized, processed, executed and provided on a day to day, because there are large penalties. And how do we combine all this with veterinary documentation? But we are trying ...

SUPPORT GOVERNMENT

DN: Do the authorities of the Krasnodar Territory support you? You were granted a subsidy to reimburse the interest rate on loans, were you allocated about 84 million rubles?

IM: The amount is wrong. We were allocated 18 million rubles for the production of butter. Previously, subsidies were provided to processors for the entire volume of purchased milk and subsidized the rate on short annual loans. We used these subsidies, all this money was redirected to the development of dairy farming: we transferred them in the form of loans for the purchase of milking machines, coolers, repairs, heifers, and combines. We knew exactly what the money was spent on.

Now the subsidy is given to milk producers, but it seems to us that it dissolves into general needs. And we, as an interested party, accepted the calculation with milk, received by the increase. Convenient, comfortable, transparent.

DN: Until what year was the subsidy valid?

IM: Until 2012. Then they transferred it to a liter of milk produced. Now there is support for milk, which is used for the production of butter, but this is a small amount. Banks are involved in this project.

At the moment, the system itself has changed: the money is not in the ministry, you work directly with the bank. We received a loan in the amount of a billion rubles, but there are many nuances. For example, once I have received it, I must master it. Although we are now working with Gazprom, they have normal conditions for non-sampling.

The problem is that today the cost of producing butter from our local milk corresponds to market prices, but what if it is the other way around? If it is not profitable to produce oil, then subsidies are not needed. There are certain nuances, but we use this support.

DN: You were among the lucky ones, not everyone was given support this year.

IM: They didn’t give to us, they gave it to the banks. Banks turned to everyone who works with them, it is necessary / not necessary. If necessary, submit a request.

We were allocated about 18 million rubles (this is if we recalculate the interest rate discount) for milk, which is used for the production of butter. We have calculated the volumes for the annual requirements. By the way, this is the maximum amount, no more.

They want to continue this program next year.

There is also investment money for development. First they said that they would give it, and we applied; then there was a clarification of the directions. They were not allocated to the ice cream factory; and the production of wafer cups is possible to obtain, since there are certain permitted categories, bakery, for example.

Investment money goes exclusively to chiseled, targeted industries and spheres. We would like to fully fund our development program, but not everything is possible.

RESULTS OF THE YEAR

DN: Igor Vladimirovich, tell us what was the year 2017 for you and for the company?

IM: Difficult and interesting. Any change entails the need to grow at the same pace as geography grows. We often opened production from scratch: we came up with a project, implemented it. The stage of implementation is very important, it cannot be compared with anything in terms of importance.

In 2017, we turned many different ideas into reality. There was also a difficult moment: it stood out in a separate entity"Real Ice Cream Factory" by separating the two companies. The process is very complicated: to create two from one enterprise, and even so that it is correct from the point of view of taxes and mutual settlements; transfer suppliers to a new legal entity; buyers for direct contracts. Working in two systems is a serious burden. But now all the ice cream produced is the "Real Ice Cream Factory". Except for the segment that goes to the external market: it is produced at the plant, because it is very difficult to obtain a EuroNumber due to the sanctions. We left one universal line, so it became technically possible.

DN: What are your plans for 2018?

IM: We have a record year in terms of the number of reconstructions. Over these 7 years, we have gradually grown a team, knowledge, competence. We have our own strength, but we also attract contractors: a company that was created from scratch, before our eyes, has been working with us for a long time, until now.

This year we built warehouses for finished products, built a receiving department, liquidated the ammonia compressor shop, launched a freon compressor room, and now we continue to build an ice cream factory. There are more plans for expansion!

Our difference lies in the fact that we produce only GOST ice cream. The rest produce an assortment, where GOST is not the main one. We produce absolute GOST and only ice cream. We also made several types: low-calorie yoghurt, fruit sorbet. We will continue to continue, to increase our capabilities.

Having made a wonderful cottage cheese, we hit the limit, because the demand for it exceeded the supply. Reconstruction was required. Now the shop is ready, but orders have dropped. So much for the risks! We are doing an analysis where we missed something. Although it is most likely a matter of price. Look at the shelf: such a range of prices!

We have a lot of plans and projects, both in relation to product innovations and in relation to various directions. For example, at the airport there is our cafe, and ice cream, and cheese cakes from our own cottage cheese, and pies of our own production. This is exactly what appeared in 2017. DN: What are your wishes for your colleagues from the dairy industry for 2018?

IM: A wish for all manufacturers to work honestly, competition should take place in the legal field! We communicate with all representatives of the industry in the Krasnodar Territory and know who is not engaged in counterfeiting.

Another wish for more dairy products! To have more raw materials! So that the price for it was acceptable! So that buyers can purchase a finished product and afford to include milk, sour cream, cottage cheese, kefir in the main diet.

What does a tourist need?

A tourist needs:

1.3. Go hiking to interesting places without spending extra time and money;

What does an ICC member need?

An IAC member needs to:

Sports tour competition? Who is competing? Clients who have a better instructor or travel agencies who have better service. It is quite possible and even necessary. But what has to do with the IWC.

Travel competition is a wonderful thing. We do not want to dismiss our non-“sports” brothers, especially when it is no longer possible to dismiss them, and indeed there are not so many of us left (those who come to declare). Just how we compete with them - we compare them on their non-standard routes and means of transportation, even if not everything is simple with the standard ones.

A more or less clear situation with the SP championship. The organization of the championship is a very complicated and time-consuming process. It is necessary: ​​to release the regulation, to put in piles the protected reports, not to forget to collect the entry fees, to collect the judges (here without irony), to fill in the protocol. The refereeing is reasonably timed to coincide with the spring session of the federation, this is the only way to gather at least some kind of Russian representation. The winners for the frequent are those who were able to leave the Russian territory as far as possible. That's right, we mastered Mother Russia in the 70s and 80s. years (this thesis will be used later), and travel around the country can be more expensive and more dangerous than abroad. Life, probably, is seething, many participants in the hikes of the first, second and third categories strive to become their reports for participation in regional championships, to become heroes and to arrange for themselves the second or third category in sports tourism (just do not give the examples of Moscow and St. Petersburg again). Average Russian city in difficult (4-6) classrooms, even for the most massive water tourism, issued heels of groups, and they know each other as flaky, and that, they will judge each other. Better at competitions or at a tourist evening they will sit with a beer all together, talk, watch films, who went where, how they went, and then there is more benefit.

Yes, with the competition of hiking as it is not very. And in general, why should the ICC be engaged in their organization? The path is handled by the active of the federation, preferably someone younger, and members of the ICC are invited as experienced judges. It is possible and not only members of the ICC. You see, they themselves will start to work more actively, they will come up with something interesting.

As a real conservative, I have no complaints about this point. In my opinion, this is the main, basic task of route commissions.

In this area of ​​tasks, the IWC commissions have not lagged far behind in structure. Just 15 years.

The good old days, when the leader of the campaign went to the club, took a paper report, photographed and rewrote the most important sections, traced the maps. All reports were certified by the strain and the indisputable signature of the meters of the members of the route commission. To get into the circle of these people was very honorable (usually for life, as secretary of the Politburo). Even the literature with the rules for conducting trips was not very accessible.

And now ugh, what disgusting, the Internet is littered with reports, any kid who has a little head boil, maybe, having opened section six of "Russian Tourist", classify his route. Here are the fools why they published a description of the obstacle. Now they would come to us, declare, consult. And the list of routes also had to be kept under lock and key in a secret room. No respect for veterans, and in general you need to buy Rospatent to categorize routes. And who does not have a minibus to the court with the police, as in Soviet times. Yes, some kind of lawsuit, for example, for copyright infringement. Cho the police do not want to help. Nothing, there are other ministries. The border guards are already helping us, they require a minibus for admission to the border area. GIMS also wants to help, but as long as it is not right. Well, nothing, we will teach them, let them also require a certificate from the ICC when registering tourist ships (for money, of course). And what about the classification, with the categories. Tourism was introduced into the uniform sports classification in 1949. Grades were now awarded only sequentially, first: the tourist of the USSR, then the third. Let them sweat. And if someone is too zealous and a rebel, then let them go “thirty percent”. Two, four, five. Like we were in our youth on a three-stage system. And then they will perpetrate a riot.

And it all worked great, right up until 1991. Giants! What more can be said. And it worked because the state of the USSR-ovskoe of the lower grades itself made out with the pens of full-time instructors. The instructor needed performance indicators, he assigned both the Tourist of the USSR and the 3rd grade and the second. At the local level.
